Breakfast


I started out with some fresh vegetables that I liked. Orange pepper, asparagus and red onion. While I was chopping these, I also chopped two pieces of nitrate-free smoked bacon and put them in a pan to cook a bit. Some followers of Paleo avoid bacon because it is "processed" But I think that smoked meat is about as Paleo as you can get--I try to avoid meat that has nitrates and just go with organic smoked bacon. I know, I know it probably is "cured" with sugar, but I like it and I am not giving up every single thing that I like, the amount of sugar in it would be nominal at best since according to the label one serving (two slices) has only 1 gram of carbohydrates.

I added the veggies to the pan and let them cook in the bacon juices until they were mostly done, but still vividly colorful, and then I cracked two eggs into the pan, sprinkled them with a little ground mixed peppercorns (must limit it to 1 tsp. per day), and some sea salt. Salt is kept to a minimum in the Paleo diet, but I don't salt things very heavily typically, and I doubt that Paleo peoples lived completely without salt either. I covered the pan and let the eggs cook for a few minutes and then when they were set, it was time for breakfast. I had a cup of white tea with breakfast.
