I am now officially out of dairy products, except for a little sour cream which I will continue to use from time to time, and some heavy cream which will also be a continual part of my diet. I will not be eating huge amounts of dairy. In many cases where a recipe calls for cream I will use coconut milk instead. You may have noticed that I have a weakness for ranch dressing. I really like it, and can get kind of tired of salads, so it enables me to keep eating salads, because of the yumminess of the dressing. I also love Bleu cheese dressing. These are things that I will continue to eat even though a Paleo Purist might not.
I have been consistently losing a few ounces each day--one of the side-effects of Paleo dieting is weight loss if you are overweight, and I am. I suppose now would be a good time to give you my health stats: I am 40 yrs old, 5 foot 5, and 168.8 pounds. According to my research, I should weigh somewhere between 125-145, so as a Low Oxalate Paleo, part of my journey will be to lose 25 or more pounds. AND I think it would be nice to weigh 125, which would mean I need to lose 45 pounds. So, twenty five pounds to be in the "healthy" range for my height, and another 20 to look really good and fit. It will be interesting to see if I can lose the extra weight by following a Paleo Diet. I go religiously to the gym three days a week to run, and lift weights, and fit in a couple of hours each day to walk or bike as well, so between the two I should be getting in shape eventually.
