After breakfast, I reviewed my diet food lists. I suppose it is the fact that my LS has gotten worse the past week, and it makes me miserable, and so I am seeking answers in my diet since everything else is exactly the same as ever. By "everything else" I mean my medical treatment of the disease which is limited to a topical cortico-steroid cream once or twice a day and a visit to the doctor every three months. To be honest, the past two months have been the best in ages, and the only thing I have been doing differently is following this diet, so I am motivated to keep going, and to discover what may be the root of my sudden flare-up. Anyway, so I reviewed the diet information from the Low Oxalate Diet Cookbook, and the general information about the Paleo diet that I have been mingling it with. I noticed several things right away. One was that brunch was 30 grams of oxalate already, and I am supposed to be keeping my oxalate content down to 40-60 per day. The other thing was that coffee is considered low-oxalate--which I have been avoiding and not drinking very often because I was under the impression that it was medium oxalate. The past week, I have been eating a lot of fruit and vegetables, and nuts almost every day. Probably, if this flare-up is caused by oxalates that is where the problem lies. I don't think I have been very good at counting them. It gets really complicated since all the veggies I really like are medium oxalate, and the low-oxalate ones that I like I tend to eat huge amounts of--which adds up! Anyway, for the last couple of weeks, with all the fruit and nuts, I have probably been over-eating the oxalates without keeping proper track. So, long story short, I have determined to keep it in check. The best way for me to do this is to cut out the fruits and limit the veggies and nuts. The things I like to eat for snacks are limited, since nuts are pretty much out except for occasionally. So, above is a picture of what I snacked on--smoked salmon--quite a lot of it actually (really hungry). I don't have a picture of dinner, but it was leftovers from Christmas. I made game hens stuffed with a sausage and fruit and nut stuffing. It was very good (another medieval recipe). My oxalate count for the day was about 50.
