Today is my anniversary. We celebrated with marinated rib-eye steak, brussels sprouts with french vinaigrette, and a very expensive bottle of champagne. The marinade for the steak was 2 T. olive oil, 1 T. Worchestershire sauce, 1 T. Balsamic vinegar, and 1/4 cup red wine. The vinaigrette for the vegetables was 1 T. good brown mustard, 1 T. balsamic vinegar, and 1 T. olive oil. I also melted a little butter on the sprouts (about a tablespoon). For M, I also made a pear and bleu cheese salad with sugared walnuts as an appetizer, along with some gingered shrimp. I ate some of the shrimp, and about an ounce of cheddar cheese, but had to forgo the salad since it had several high-oxalate things in it (spinach & walnuts). The champagne made up for the lack of salad :)My oxalates for today were about 50.
