
Dinner was a nice mixed salad of romaine, cucumber, yellow pepper and tomato, with cauliflower mash, made with steamed cauliflower and a tablespoon of sour cream and butter, and chicken thighs roasted in olive oil. It was very good. I like the cauliflower to be cooked so that you can whip it like mashed potatoes and add whatever ingredients you want to make it taste delectible. I love potatoes, but they are not Paleo, and they are very high in Oxalates, so I cannot eat them. This caulifower makes up for it. They are every bit as good as mashed potatoes!
