
For dinner I made a casserole (which is loaded with dairy) :( but tastes extremely good :) I served it with sticks of cucumber and orange pepper, sprinkled wth grape tomato halves. So, not very Paleo, but still fits within my low oxalate requirements.
Here is the recipe:
Stroganoff Casserole
1 pkg. frozen broccoli (14 oz.)
2 pkg. cream cheese at room temperature (8 oz. each)
2 ounces Parmesan cheese shredded
1 cup mozzarella cheese shredded
1 pound ground chicken
1 pound ground pork
2 cups mushrooms
1 tsp. garlic powder
1 tsp. salt
1/4 tsp white pepper
1 tsp. basil
¾ cup heavy cream
Boil the broccoli, and drain, add one package of cream cheese to hot broccoli and cover, set aside. Brown the ground chicken and pork with the mushrooms, drain excess liquid, then add one pkg. of cream cheese cubed. When cream cheese has melted, add parmesan cheese, garlic, salt, pepper, basil, and heavy cream. Let simmer until bubbly and fragrant. With a fork mash broccoli and cream cheese together, until well incorporated. In a buttered casserole dish layer ½ of the meat mixture, all of the broccoli mixture and ½ of the mozzarella. Top with the remaining meat mixture and sprinkle with the rest of the mozzarella. Bake in the oven at 350 for 30 minutes, or until brown and bubbly.

This is an extremely high-calorie casserole, but tastes very good. You could make the servings smaller and serve it with an enormous salad and get a much more balanced meal out of it.
