Breakfast:Cauliflower omelet
A two-egg omelet, with cheese and cauliflower prepared with 1/2 T. of butter melted in the pan, two organic eggs, and 1/8 of Linda's Just Like Stuffed Baked Potatoes (which I have to admit is chock full of dairy and therefore not appropriate for Paleo Purists--but the casserole is leftover from the weekend feast, and I am loath to waste food...and it is incredibly yummy with eggs.)
If I were trying to be a pure Paleo/Low Oxalater, I would perhaps cook some cauliflower, and whip it with a bit of bacon fat and pepper and whatever herbs I wanted (basil might be good) then make the omelet and stuff it with the puree. It would be a good way to use up leftover puree that you may have had for dinner the night before...it would also taste really good with a bit of ham or smoked bacon or pork chop--so there are a couple ideas for a Low Oxalate/Paleo substitution. I will try to do this each day that I eat dairy (come up with substitutes). Also, anything that I dream up, I will try out and if it is good, I will add it to a future menu, with the recipe.
