Breakfast was a vegetable (and cheese) omelet. The cheese was Munster, which is good for omelets because it is a mild, soft cheese that melts well, and lets the flavors of the vegetables really take over the omelet. The vegetables I used were red pepper, mushrooms, and sweet onion. I let them carmelize in olive oil a little first before I added them to the omelet. Then I just added the cheese and folded the omelet to cook for one more minute.I didn't get my coffee today because as soon as we ate, we ran off to the gym...
