Day 58 Breakfast

Breakfast was a vegetable (and cheese) omelet. The cheese was Munster, which is good for omelets because it is a mild, soft cheese that melts well, and lets the flavors of the vegetables really take over the omelet. The vegetables I used were red pepper, mushrooms, and sweet onion. I let them carmelize in olive oil a little first before I added them to the omelet. Then I just added the cheese and folded the omelet to cook for one more minute.
I didn't get my coffee today because as soon as we ate, we ran off to the gym...
