Breakfast

As I mentioned earlier, I am trying to get rid of all the cheese I have, some of which is cream cheese, and this morning, having arisen at 5-something am, and in the grip of PMS which as any woman can tell you is often an emotionally charged period full of things like random grouchiness, cravings, and completely illogical emotions...I broke down and had green tea and cheesecake for breakfast. It is definitely not Paleo, but is Low-Oxalate. It was an experiment with a recipe I had that called for sugar--I had no sugar, so I substituted with Da Vinci Sugar Free Vanilla syrup. Here is the recipe:

Crustless Sugarless Cheesecake
2 8 oz. packages of cream cheese
1 cup sour cream
3 eggs
2/3 cup Da Vinci Sugar Free Vanilla Syrup
Melt cream cheese in microwave until creamy and smooth. Beat in sour cream, eggs, and vanilla syrup, add a pinch of nutmeg. Pour into a greased 8 X 8 inch pan and bake in the oven at 350◦ for about 50 miutes (just keep an eye on it). It will rise up like a souffle, so be careful, best to put something under it just in case. After you take it out of the oven it will de-inflate and become more dense. If I ever make this again I may leave out one or more of the eggs--it seemed kind of egg-y in texture.

I refrigerated mine for several hours before I actually ate it. It was OK. Not earth-movingly wonderful, but tolerable, and sweet, and was just what I needed emotionally if not physically... But I felt guilty having cheesecake for breakfast instead of something with fresh fruit or vegetables. AND it most definitely was not Paleo. I know for a fact they did not have sugar free Da Vinci syrup in the Paleolithic age--or for that matter, cream cheese or sour cream. But sometimes you just have to give in to your urges. I did not break my Low-Oxalate diet--I was good in that respect, so as a healthy breakfast, I will give it a zero, but as far as how I feel about it? I will survive and eat something much more healthy for lunch.
